Simple Leftover Turkey Recipe

Not sure what to do with all that leftover turkey? Then try my leftover turkey casserole. Made with leftover Thanksgiving turkey, gluten-free pasta, dairy-free cheese, and your favorite red sauce. It's the perfect solution to a simple, no-fuss meal.

I don't know about you, but after all that holiday cooking I just want a quick and easy meal. This simple leftover turkey recipe is great for nights when you just need to get dinner on the table. It's comforting, full of flavor and a simple way to use up all that leftover turkey.

Ingredients

  • Turkey - Use up your leftover turkey. White or dark turkey meat will work in this recipe.
  • Gluten-free pasta noodles - I recommend using spiral or penne noodles.
  • Dairy-Free cheese - I use Follow Your Heart, but use your favorite brand.
  • Spices - Add Parsley, salt, and ground black pepper to taste.
  • Sauce - Use any brand red sauce for this recipe.
  • Egg

How to Make Leftover Turkey Casserole

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Spray a 9×13 baking dish with cooking spray and set it aside.
  3. Cook the gluten-free pasta according to the package directions, drain and cool. Do not rinse.
  4. Cut up your leftover turkey into small cubes.
  5. Mix together the turkey, cooked pasta, dairy-free cheese, egg, parsley, salt, and black pepper in a large mixing bowl (paid Amazon link).
  6. Pour the mixture into the prepared baking dish.
  7. Pour the sauce evenly over the mixture.
  8. Cover the baking dish with foil.
  9. Bake for 45 minutes.
  10. Remove from the oven and serve immediately.

Can You Freeze Leftover Turkey Casserole?

Yes. Before baking, line your baking pan with foil leaving enough to hang over the sides. Make up your casserole, then fold the foil over and bake. Let it cool completely. Remove the casserole from the baking pan and wrap it in another layer of foil. Seal the foil tightly, then place it in the freezer for up to 4 months.

How Long is Leftover Turkey Good for?

Leftover turkey lasts 3-4 days in the refrigerator and up to 3-4 months in the freezer. A good general rule is to use the leftover turkey by the Monday after Thanksgiving. After that, you should toss it.

  • 2  cups  Leftover turkey  cut into cubes
  • 1 package Gluten-free pasta noodles cooked, drained and cooled
  • 8 ounces Dairy-free cheese  any brand
  • 1 large Egg
  • 2 tsp. Parsley
  • 1/2 tsp. Sea Salt
  • 1/4 tsp. Ground black pepper
  • 1 jar Red Spaghetti Sauce any brand
  • Cooking spray

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.

  • Bake at 350 degrees Fahrenheit for 45 minutes.
  • Remove from the oven and serve immediately.

Since August, I've been adjusting to a new season in my life. We sent our only child Paige to college and it's been very difficult for me. I needed time to embrace this season, and sit in the sadness and disappointment for a while. I had to take a break from my blog and social media.

TIP #1: MAKE A WEEKLY MEAL PLAN.
Creating a meal plan does not have to take hours of your time. With a little practice, it can be done quickly.
TIP #2: USE LEFTOVERS.
The best way to do this is to make one meal and use the leftovers for another meal.

One of the biggest motivators for my recipes is my family. I am big on sharing family meals and dinners. I mean it seriously just warms my heart when we all come together and share a meal. 
That feeling of connection through food is so universal. When I was first diagnosed with food allergies it felt like I lost that connection. 
Another HUGE motivator for me is YOU! Yes, that's right YOU! I want you and your family to feel that connection through sharing meals together despite food allergies.

Suggestion to start off on the right foot, make a gratitude list while you sip your cup of coffee. Whatever you do, I bet you’ll be surprised by how much of an impact it will make on the rest of your day!
