This recipe is not for traditional apricot bars. My simple and delicious apricot bars use dried apricots and are made with hemp and chia seeds. I know. It sounds crazy, but trust me, these are so good. I sprinkle in some dark chocolate chips and have the perfect after-school snack. You might even try one for a quick breakfast. No matter when you eat these, you won’t believe how delicious they are.

How to Make Apricot Bars

  1. Cut dried apricots into small pieces equal to 1 cup.
  2. Add apricots, hemp seeds, and chia seeds to a food processor, and pulse on high until the texture becomes like coarse sand. (about 2-3 minutes). I use this Black and Decker Food Processor. (paid Amazon link)
  3. Pulse in eggs, vanilla, and salt until a ball starts to form.
  4. Remove the bowl from the food processor and stir in chocolate chips using a spatula. I use Enjoy Life Allergy-Free Dark Chocolate Chips.
  5. Scoop into a greased 8×8 baking dish and spread evenly.
  6. Bake for 30 minutes.
  7. Cool for 10 minutes before slicing.
  8. Store in the refrigerator for up to 2 weeks.

Recipe Variations

  • Substitute nuts (walnuts, pecans, almonds) for the hemp and chia seeds.
  • Add 1 cup of quick-cooking oats for extra crunch.

Recipe Tips

  • Cut dried apricots into smaller pieces before processing.
  • Cool completely to room temperature before storing.
  • Line the storage container with parchment paper then, store it in the refrigerator.

Apricots pair well with warm spices such as vanilla, cinnamon, nutmeg, allspice, and cardamon.

Ingredients

  • 1 cup Dried apricots cut into small pieces
  • 2 cups Hemp Seeds
  • 1 Tbsp Chia seeds
  • 2 large Eggs
  • 1/4 tsp Sea salt
  • 1 Tbsp Vanilla extract
  • 1/2 cup Chocolate Chips I use Enjoy Life Dark Chocolate Chips (allergy-free)

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Cut dried apricots into small pieces equal to 1 cup.
  • Add apricots, hemp seeds, and chia seeds to your food processor.
  • Pulse on high until the texture becomes like coarse sand. (about 2-3 minutes).
  • Pulse in eggs, vanilla, and salt until a ball starts to form.
  • Remove the bowl from the food processor, and stir in chocolate chips using a spatula.
  • Scoop and spread into a greased 8×8 baking dish.
  • Bake for 30 minutes.
  • Remove from the oven, and cool 10 minutes before slicing.
  • Store in the refrigerator for up to 2 weeks.

Since August, I've been adjusting to a new season in my life. We sent our only child Paige to college and it's been very difficult for me. I needed time to embrace this season, and sit in the sadness and disappointment for a while. I had to take a break from my blog and social media.

TIP #1: MAKE A WEEKLY MEAL PLAN.
Creating a meal plan does not have to take hours of your time. With a little practice, it can be done quickly.
TIP #2: USE LEFTOVERS.
The best way to do this is to make one meal and use the leftovers for another meal.

One of the biggest motivators for my recipes is my family. I am big on sharing family meals and dinners. I mean it seriously just warms my heart when we all come together and share a meal. 
That feeling of connection through food is so universal. When I was first diagnosed with food allergies it felt like I lost that connection. 
Another HUGE motivator for me is YOU! Yes, that's right YOU! I want you and your family to feel that connection through sharing meals together despite food allergies.
    Ooooooh friend, I know it’s easy to get caught u Ooooooh friend, I know it’s easy to get caught up in the morning rush, but take a few moments to start your morning off on the right foot. 
Suggestion to start off on the right foot, make a gratitude list while you sip your cup of coffee. Whatever you do, I bet you’ll be surprised by how much of an impact it will make on the rest of your day!
