This recipe is not for traditional apricot bars. My simple and delicious apricot bars use dried apricots and are made with hemp and chia seeds. I know. It sounds crazy, but trust me, these are so good. I sprinkle in some dark chocolate chips and have the perfect after-school snack. You might even try one for a quick breakfast. No matter when you eat these, you won’t believe how delicious they are.

How to Make Apricot Bars
Cut dried apricots into small pieces equal to 1 cup.
Add apricots, hemp seeds, and chia seeds to a food processor, and pulse on high until the texture becomes like coarse sand. (about 2-3 minutes). I use this Black and Decker Food Processor. (paid Amazon link)
Pulse in eggs, vanilla, and salt until a ball starts to form.
Remove the bowl from the food processor and stir in chocolate chips using a spatula. I use Enjoy Life Allergy-Free Dark Chocolate Chips.
Scoop into a greased 8×8 baking dish and spread evenly.
Bake for 30 minutes.
Cool for 10 minutes before slicing.
Store in the refrigerator for up to 2 weeks.
