This dairy-free chicken recipe is another one of my family’s favorite chicken recipes. Back in January, I shared my Gluten-Free, Dairy-Free Chicken Recipe. I’ve been making a lot of dairy-free chicken recipes lately, so I wanted to share this one too. This recipe takes a lot less time and is perfect for a simple weeknight meal.

What To Know Before Making This Recipe

Dairy-Free Parmesan Cheese: This recipe uses dairy-free parmesan cheese. There are several brands on the market. Follow Your Heart Dairy-Free Parmesan Cheese is made from palm oil and comes shredded or grated. Violife Just Like Parmesan Wedge is dairy-free and made with grains like rice and potato and from coconut oil. Parma! Vegan Parmesan is made with nuts and seeds. Nooch It! is dairy-free, vegan, and made from cashews (paid Amazon links). Whole Foods and some local grocery stores also sell these brands.

Dairy-Free Butter: My favorite dairy-free butter is Earth Balance. It comes in original and soy-free. I also use Spectrum Organic All Vegetable Shortening as a butter substitute. It is made from palm oil and contains no hydrogenated fats. I get both at my local grocery store.

Gluten-Free Bread Crumbs: Ian’s, (paid Amazon link) Panko and Katz make gluten-free bread crumbs available at Amazon and at most local grocery stores. I use Ian’s because it comes in an Italian style that adds a lot of flavor to my chicken recipes and it’s also a little cheaper than other brands.

Bread crumbs are also easily substituted with ingredients like oats, cornflakes, potato chips, nuts, seeds, shredded coconut, or almond flour. Crush up and blend any of these items using a sealed Ziploc bag or a blender. I personally have not tried any of these substitutions.

Chicken Breasts: Thaw the chicken thoroughly. If the chicken breasts are fairly large, cut them in half before beginning. This will help them cook faster, and more evenly.

How To Make This Recipe

Preheat oven to 375 degrees Fahrenheit.

Lightly coat the baking pan with cooking spray. Set aside.


Set out 3 medium-size bowls. Melt the butter in 1 bowl. Place the cheese in another bowl and the bread crumbs in another.

Add the spices to the bowl with the bread crumbs and mix.

Dip each chicken breast in the butter, then the bread crumbs, and then the cheese.

Place chicken in the prepared baking pan.

Bake uncovered for 35-40 minutes.
Serve immediately.

  • 9×13 baking pan
  • 3 Medium Mixing Bowls
  • Measuring cups
  • Measuring spoons

Ingredients

  • 4 medium Chicken Breasts boneless and skinless
  • 2 Tbsp Dairy-Free Butter melted
  • 3/4 cup Gluten-Free Bread Crumbs
  • 1/4 cup Dairy-Free Parmesan Cheese
  • 1 Tbsp Oregano
  • 1 tsp Paprika
  • 1 tsp Parsley
  • 1 tsp Sea Salt
  • 1/2 tsp Ground Black Pepper
  • Cooking Spray

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Spray the baking pan with cooking spray, then set it aside.
  • Set out 3 medium-size mixing bowls.
  • Melt the butter in one bowl.
  • Place the bread crumbs in another bowl.
  • Add the spices to the bread crumbs and mix.
  • Place the parmesan cheese in the third bowl.
  • Dip each chicken breast in the butter, then the bread crumbs, and then the cheese.
  • Once coated, place each chicken breast in the prepared pan.
  • Bake uncovered at 400 degrees Fahrenheit for 35-40 minutes.
  • Serve Immediately.

Notes

Calories are approximate and based on one 4-oz chicken breast.

Since August, I've been adjusting to a new season in my life. We sent our only child Paige to college and it's been very difficult for me. I needed time to embrace this season, and sit in the sadness and disappointment for a while. I had to take a break from my blog and social media.

TIP #1: MAKE A WEEKLY MEAL PLAN.
Creating a meal plan does not have to take hours of your time. With a little practice, it can be done quickly.
TIP #2: USE LEFTOVERS.
The best way to do this is to make one meal and use the leftovers for another meal.

One of the biggest motivators for my recipes is my family. I am big on sharing family meals and dinners. I mean it seriously just warms my heart when we all come together and share a meal. 
That feeling of connection through food is so universal. When I was first diagnosed with food allergies it felt like I lost that connection. 
Another HUGE motivator for me is YOU! Yes, that's right YOU! I want you and your family to feel that connection through sharing meals together despite food allergies.

Suggestion to start off on the right foot, make a gratitude list while you sip your cup of coffee. Whatever you do, I bet you’ll be surprised by how much of an impact it will make on the rest of your day!
